Title: Vlan over two switches
Wanting to create a couple of vlans to separate my IP cameras, a guest network on a separate AP and a couple of IoT devices (so in effect 3 Vlans) that cannot see or communicate with one another)

The switches are the RG-ES210GS-P and the RG-ES206GC-P. The router (3rd party) does not support vlans.

Is it possible to do this? And if so, how. Have followed a few instructional videos to no avail.

Dear customer,
Unfortunately, to configure the VLANs you need. You will need a gateway(Usually it is your router) that supports the VLAN function
for your AP and IP cameras.

Creating VLAN to separate IP cameras, guest networks and IoT devices is definitely a good solution to enhance network security, but you need to check the ports that support VLAN functionality to be effective right after changing the network.
