Is it possible to use multiple lan address ranges (e.g.: 192.168.0.0 /24 , 192.168.2.0/24) with this device? If yes, the ranges allocated to a vlan or a port?
Are there any online reyee device simulator?

Yes, it is possible to use different LAN ranges like the examples you mentioned. These are configured as VLANs. You can create an account on Ruijie Cloud and view demo projects to observe the behavior of the devices.
